- 1 lb ground chicken
- 1/2 red onion, diced
- 1 bottle buffalo sauce (or more, depending on your spice preference)
- 1 cup cottage cheese
- A bunch of fresh cilantro, chopped (plus extra for garnish)
- Juice of 1 lime
- Big shake of cumin
- 1 garlic clove, minced
- 1 avocado ranch salad kit (prepared)
- Feta cheese, crumbled (for topping)
- Almond flour tortillas (for a grain-free option)
- Seasonings: onion powder, salt, pepper
Instructions
1. Cook the Ground Chicken:
In a cast iron pan, sauté the diced red onion over medium heat until softened. Add the ground chicken to the pan and season with onion powder, salt, and pepper. Cook until the chicken is browned and cooked through.
2. Add the Buffalo Sauce:

In a blender, combine cottage cheese, lime juice, cilantro, garlic, cumin, and about 1/2 cup water. Blend until smooth and creamy. This will be your cool, tangy sauce to balance the spicy chicken.
