Ingredients

  • Diced pineapple

  • Diced avocado

  • Fresh cilantro 

  • Jasmine rice, prepared

  • 1 lb ground beef

  • Chipotle hot sauce 

  • 2/3 tbsp Greek yogurt

  • Drizzle of hot honey

  • 1 tsp onion powder

  • Salt and pepper, to taste

Instructions

1. Brown the Ground Beef:

In a pan, cook the ground beef over medium heat. As it cooks, season with onion powder, salt, pepper, and a generous drizzle of chipotle hot sauce. Stir to combine and cook until the beef is fully browned and seasoned.

2. Cook the Rice:

Prepare the jasmine rice as directed on the package. It’s the perfect base for this bowl, with its fragrant and soft texture.

3. Make the Chipotle Mayo:

In a small bowl, combine Greek yogurt with a little extra chipotle hot sauce to create a smooth, creamy chipotle mayo. Stir well until it reaches your desired level of spice.

4. Assemble the Bowl:

Start by adding a scoop of jasmine rice to the bottom of your bowl. Top with the cooked ground beef, diced pineapple, and diced avocado. Drizzle with your homemade chipotle mayo, and finish with a sprinkle of fresh cilantro and a drizzle of hot honey for a sweet kick.

Notes

  • Rice Substitutes: You can swap jasmine rice for brown rice, cauliflower rice, or quinoa if you prefer a different base.

  • Sweetness Level: Adjust the amount of hot honey based on your preferred sweetness. You can also use regular honey if you prefer a milder flavor.

  • Chipotle Sauce: If you want more heat, feel free to add extra chipotle sauce or even a few slices of fresh jalapeño for extra spice.
